It's that for some reason my tastebuds register spice as intensely bitter. Do other people get this?
I don't—most spices taste good to me, so I complain when a spicy dish focuses on the capsaicin at the expense of flavor—but it makes sense to me, epecially if it's pepper-based. I don't have the cilantro-as-soap thing, but I have some vegetables that taste terrible to me unless I cook them in specific ways, or sometimes they just taste terrible. I know someone who finds carbonation unpalatably acrid rather than neutrally tangy. Different people have chemically, physiologically different taste.
